Particularly rich of iron and vitamins, broad beans are a perfect companion for salads, sauces for first dishes and soups. We suggest to make a puree out of them together with potatoes, then add chicory and lay everything upon toasted slices of bread. It is possible to complete the dish with a bit of extra virgin olive oil.

Let a little bit of water boil, then pour the frozen product into the pot and wait for the water to return boiling, then leave it cooking for about 30 minutes over moderate heat. Drain it, then dress or cook it as desired.
